They are easy to make, fun to eat and delicious in the belly.
One batch makes quite a bit so they would be ideal if you had guests to feed.
They would even be great for Thanksgiving or Christmas morning.
You will need:
-6 eggs
– 1cup milk
-1 cup flour
-1 teaspoon of vanilla
-1/2 stick butter
First, preheat the oven to 425 degrees.
Put a half a stick of butter in a 9 X 13 dish (mine is on loan so I’m using a cake pan and only using 1/2 the batter.) Place in the oven to warm the dish and melt the butter while you mix your batter.
In a blender whip the eggs, add the milk, next the vanilla and flour. Blend well on high for about 1-2 minutes.
Once the butter is melted, remove from oven and coat the sides of the pan with the melted butter. Add the batter directly in the pan and bake for about 18 minutes or until golden brown at 425.
Your pancake will grow and make a crazy fun shape while baking.

This is a ‘Must Test’. I hostess a Christmas brunch every year for my stock club – and I have been looking for something new to do – and this looks easy and will match beautifully with a variety of fresh fruits. I feel ‘obligated’ to try strawberries and sour cream just to be certain that the flavors work together…
I may even ‘test’ it several times!

Although German Pancakes are more of an American creation, they are delicious. (German pancakes “Pfannkuchen” are more like a thicker crepe).

My kids call this Puffy Pancake, and they want it all the time. So yummy. We eat ours with powdered sugar and fresh lemon juice squeezed on it. So good!
