Foodie Friday-Greek Yogurt Chicken Salad

Today’s Foodie Friday recipe is a good one from the lovely Corey Valley from Family Fresh Meals.
I’m planning on trying it this weekend and I can’t wait.  Show us what you’ve got Corey!

Howdy folks!
I was THRILLED when Michelle invited me over to share a healthy recipe with you! Trust me, ya’ll are going love it.
Healthy is always important in our household.

Being a mother of two fabulous little girls and wife to a vegetable-hating vegetarian, (yes, you read that right) I am always challenged to think of fresh meals that the whole family will love.

This Greek Yogurt Chicken Salad recipe is SO easy to whip up in no time and can be served in so many ways. The sweetness from the craisins and the creamy goodness of the yogurt will appeal to even the pickiest eater.
I’m going to show you my favorite way to eat this yummy recipe… in a wrap!

 Here is what you need: Serves 4

– 2 cups chopped, cooked chicken
– 1/4 cup diced celery
– 1/4 cup dried craisins
– 1/4 cup of plain, Greek Yogurt (I use fat-free)
– 1 TBSP Mayo (I love the kind made with olive oil)
– 1/4 tsp salt
– 1/4 tsp pepper
Optional stuffing ideas, carrots, lettuce, sprouts

Directions:
1. Mix all ingredients in a large bowl.
2. Chill for at least 30 minutes to let all those flavors combine.
3. Can be served in a wrap, sandwich, on a salad or with crackers.
When I use fat free yogurt and the olive oil mayo, a serving of this delicious Greek Chicken Salad rings in at only 99 calories!
